Tahini is a thick paste made from ground sesame seeds. We use it in our Sesame Sauce and dressing of course, but also in our famous Hummus and Baba-Ghanouj. Because the sesame seeds are ground into a paste, tahini is very easy to digest, and many of the sesame seeds’ wonderful nutrients find their way in the body within about half an hour of consumption.
Everything you eat at Saca’s is made from scratch in our kitchen: a good example is what we do with garbanzo beans a.k.a. chickpeas. We get them dry, soak and cook them daily so that you can enjoy the many health benefits these golden peas have to offer in our hummus, falafels and salads.
Parsley is native to the Mediterranean region of Southern Europe. While it has been cultivated for more than 2,000 years, parsley was used medicinally prior to being consumed as a food. And for good reasons! This delicious and vibrant herb not only is nutritious but also has wonderful healing properties.
At Saca’s, we buy our parsley at its freshest. It is hand washed several times and trimmed of its stems. The parsley’s leaves are then hand chopped to avoid leaves’ bruising and to preserve the wonderful health benefits you enjoy in Saca’s Tabouleh and famous falafels.
For the people of the Mediterranean basin the olive tree is a sacred tree as it has been part of their lives for thousands of years. The olive was first domesticated in the Eastern Mediterranean basin between 8,000 and 6,000 years ago. Ancient people pressed olive oil as far back as 8,000 years ago on the Eastern shores of the Mediterranean Sea.
For us at Saca’s, olives are sacred as well because they are at the heart of our cuisine, present in the form of olive fruits or olive oil in almost all of our recipes. That’s why we put quite a bit of thoughts into choosing the right products. We import our Kalamata olives from Greece. They are authentic Kalamata olives from Kalamon olive trees in Southern Greece. These genuine Kalamata olives are allowed to ripe fully before harvest, and are cured in salt brine, before being shipped to us.
For a small vegetable, garlic sure has a big, and well deserved, reputation. And although it has not been proven that garlic may bring good luck, protect against evil, or ward off vampires, it is guaranteed to transform any meal into an aromatic and healthy culinary experience.
At Saca’s, Garlic shares the central stage with olives and olive oil as this little wonder is present in many of our recipes, the most famous one being our Garlic Sauce .
Veggies are essential to your overall health and that special skin glow! At Saca’s, you cannot miss your share of greens. Vegetables are present in one form or another in every platters and sandwich. And you can always add more with our choice of salads and/or vegan soup and/or sides. Spices and herbs are also Saca’s cuisine’s signature. Over 25 spices and herbs are used daily in our kitchen in the preparation of the wonderful flavorful food you love.
